Great job, the grub looks great. I love my wsm. To be honest my lid thermo usually settles where my et-732 is after it all warms up, that is when it's on my top rack. Did u download pictures to site from IPhone?
Get a wsm. I love mine. You don't have to tend them, set it and forget it. They work great for overnight smokes. Best of all don't need to buy any additional devices to creat smoke. Unless of course u wanna cold smoke in it.
After 1 or 2 more smokes u should get better temp control. Keep the lid on, long periods of it off will make fire hotter. Keep charcoal door shut to. The hotter it is out side the less charcoal it takes to heat up. You'll be fine. Do a couple fatties and chicken wings and higher temp will work...
That looks like 2 pork shoulders. I'd make pulled pork. The shoulders usually come with two together. I'd look in search bar at pulled pork recipes. So you'll probably have 2 7# shoulders that'll take around 15 hours.
Is the wsm brand new? My first couple smokes were a little warmer. But I only use kingsford, royal oak burns hotter. When I do the minion method I just dump the 15-20 briquettes on top in the middle. I think I'm in the minority that doesnt use the coffe can technique. I would try less lit coals...
Can u not use the top rack cause you're putting something else on it? If u have to use bottom a roasting pan works good. I got a pretty nice one with a flat rack for Christmas.
