Turkeys don't do very well over here. I think it has something to do with diseases or something. It's just hard to keep them alive and well. They don't have horses for the same reason. We have friends that raise their own turkeys and always buy 2 in an attempt to have one stay alive to get...
That's one of the disadvantages of living in Africa. We priced a turkey for Thanksgiving and a 17 pounder was going to be $125. No, that isn't a typo. So... We had chicken instead. We can get 4 lb chickens here so we picked up 6 (cooking for 30 people). Three were done in the oven...
Sounds very wonderful. Never tried apple butter on the 'Q, but smoked/baked apples are one of our favorites, so it stands to reason it would be amazing.
BTW, I also love baked pears on the bbq, and pear butter is really good too. Might try combining them and see how it comes out.

I've used fruit juice instead of sugar and it worked real well. Just replaced some of the water with juice. Tried apple (my fav), orange, and pineapple.

Missionary. I work with an organization where my wife and I oversee ministry to children, youth, and also oversee child welfare for the mission. Keeps us busy.

I have done a smoked turkey for the last few Thanksgivings. Try this: When you make the brine, use maple syrup instead of sugar and then brush the bird with maple syrup while it smokes. FABULOUS.

I've been looking around for a little bit and thought I'd join. I'm always looking for new ideas and info RE: BBQ. As my profile says, I'm in Uganda Africa so BBQ supplies are non existant. I have to make everything myself including ketchup so that I can make my own BBQ sauce. Makes things a...
Hello,
I've been lurking on this forum for a bit and decided to join. Places like this are great for me as I have to do a lot of improvising as I live in Africa. Pretty much have to create everything you want in this area. For example, I can't buy BBQ sauce so I have to make my own. As is...
Hickory and mesquite aren't going to be found locally. Maple, oak, & alder are good and grow everywhere there. Look for them being sold as firewood. Apple, plum, & cherry work. Look for an orchard during winter pruning. Another one that works well, but hasn't been 'discovered' yet is...
Howdy,
I moved to Uganda almost 2 years ago and have been working through the same issue. This place is just fresh out of hickory and mesquite. Here is what I have found: Mango works well. It is not too strong, kinda' like apple. It is good on chicken, OK for beef, but a bit weak. Sugar...
