    Smoking a whole turkey?

We decided to inject a pork roast, but it's only going in the oven. Got the recipe on this site and we thought we'd give it a try. We made a rub too, and the fridge smells delicious. We're going to put some more rub on in the morning, but I am not sure whether to pat it dry or just apply with a...

    Need Boston Butt Injection

LOL Bear. I know you don't inject. I am new, but I have read some of your posts. However, I appreciate you answering my question regardless of how you feel about injecting. Miller, thanks to you as well for responding to my question. I have only used liquid smoke in jerky and pepperoni, so I...

How big a smokehouse should I build

OK, I spent most of last night researching curing of hams. I came across Country Smoked Ham. Wow, what a job. That would be nice to try sometime, but I think I will work on simple hams for now. The place where my meat is being smoked right now only keeps my meat for a couple of weeks, and it is...

    Need Boston Butt Injection

I have a question, but I think I know the answer. I hate to say this, but it is cold in Canada, and I am only researching plans on a smoker right now.  I am doing a roast in the oven Friday. (I plan on smoking my bacons and hams from my home grown hogs) I have never injected before, so this is...

Need recommendations for thawing ribeyes quickly!

Thanks dis1, I get nervous cooking pork and poultry when it is still partially frozen. I was always told not to, so I try not to. Sometimes I do, but sometimes I don't cook it enough. Then I want to take it back out to the grill, the wife will be sour and throw it in the microwave, I get...

How big a smokehouse should I build

Hey alblancher, thanks for the reply. The biggest thing I am concerned with right now is cold smoking. I raise hogs in the summer and I have to drive almost an hour to drop off my meat, and the price seems to have gone up more than I want to pay. I have wanted to make a smoker for a while, and...

Need recommendations for thawing ribeyes quickly!

Thanks Dward for putting up those videos. Its not very often we forget to take meat out of the freezer, but often enough to warrant a defrosting tray because I will NOT defrost meat in a microwave. In fact the only time I ever use a microwave is at work.

Need recommendations for thawing ribeyes quickly!

The best way I find to thaw meat out quick is to put it in a sink of cold water, wrapped of course. Make sure water can't get in or you'll be disappointed. I have never seen these aluminum trays that dward51 and noboundaries are talking about, but it does sound better than putting the meat in...

    Smoking a whole turkey?

I have been looking at some injection sauces/marinades, I'm not sure what to call it, but everything seems to be creole butter base, then spices or whatever. What is special about the creole butter? I noticed you used it by itself. Do you normally use it by itself or does the meat being injected...

How big a smokehouse should I build

I have an idea of what I am going to do, size is my first big question, with many more to follow I'm sure.

    I'll do it myself.

Thanks for the welcome. I hope I pick up a lot of things from everyone here, and I can't wait til the snow goes so I can get to work on a smoker, then share my progress on here.

How big a smokehouse should I build

Hey Everyone, I am starting to gather up ideas for building a smokehouse, but the first thing I need help with is how big? I would like it to be big enough that I can smoke 4 hams, 4 bacons, and 1 loin at the same time. I would like to have double that capacity, but I figure the processing will...

    I'll do it myself.

Hey Everyone, I live in Nova Scotia Canada and I have started a small hobby farm, simply because I always wanted to live on a farm. I got myself a decent job and started building a small farm. I started raising hogs last year, and I enjoyed it so much, I went to the auction and got two more...
