When I do cheese...I make it a point to sacrifice some for consumption and the rest gets the 2 week sleep-over in the fridge. I learned that if I dont leave some out for use then someone in my household just grabs a pack and uses it...timeline be damned.

I would'nt be surprised if they sell the nipples here...they sell about every other part on it's own here. My luck I'd buy some belly and it would only have 1 nipple...unusually long.

Nice meal, glad all went well with the clipping too. My former Brother-in-law got an infection and had to get packed with gauze for a week - ouch! I'd rather just do ribs and pull out early!

Webers are great grills and can do some wonderful smokes with an array of equipment or simple setup! Good choice going with the Weber!
Make sure you pick up a Chimney Starter so you dont ever have to use that nasty starter fluid!!!
