    WSM and ribs quantity

Interesting questions. I'm wanting to get the 22 WSM, but will be paying extra to get it to me. Interested in knowing what the count could be for ribs on it vs the smaller unit. John

    Bacon wrapped kielbasa

I was putting it off for a long time but then because I had the bacon...thought I might as well give it a try.  Didn't smoke them, just grilled. Plenty of smoke taste from the bacon.  So easy to make and it took about an hour from start to eating. maybe a 1/2 hour on the grill indirect heat, but...

    Bacon wrapped kielbasa

I made a batch of "Pork Candy" yesterday to bring as a smack for Christmas at a friends. So easy to make and they were awesome! Used some of the bacon I made last week Wrapped and topped with a 50/50 mix of rub and brown sugar and onto the Weber Kettle! They turned out fantastic!!! My...

Merry Christmas everyone! Had my first smoked meal today and would love advice.

General guideline for charcoal, which may or may not apply to gas...is start it with vents wide open to reach the desired temp, then adjust vents to regulate or hold it at that range.  Give that a try along with the other suggestions above and don't get discouraged...it only gets better! John

Smoked Turkey on the Weber Kettle today

Thanks for looking and the compliments.  JJ - the turkey was super moist all the way even the breast was perfect.  Pulled apart easy at that temp (used for a work function and no fancy slicing needed).  Mneeley..it's not like back in MN, but that is why we are here and not there...all good! Smoked Turkey on the Weber Kettle today

Work gathering tonight...did some beef knuckle yesterday and brined a 14# bird overnight. The brine I use is a bit of this & that - no real measuring. I dissolve salt and brown sugar in some water, pour in a bunch of apple juice, some Jim Beam, crack up some peppercorns and set the bird in the...

    38" of FRESH SNOW

We don't get that kind of view around these parts!  I love the snow, but not the work associated with it or the wind or the bitter cold.... come to think of it, I may not really like the snow either! John

    How about a knuckle sandwich?

This was the only one in the store and it had really nothing to speak of for fat. I had thought of topping it with bacon but forgot.  It took the smoke great. It was a solid chunk of meat. I was also pleased with the way the pellets smoked. John
