General guideline for charcoal, which may or may not apply to gas...is start it with vents wide open to reach the desired temp, then adjust vents to regulate or hold it at that range. Give that a try along with the other suggestions above and don't get discouraged...it only gets better!

Thanks for looking and the compliments. JJ - the turkey was super moist all the way even the breast was perfect. Pulled apart easy at that temp (used for a work function and no fancy slicing needed). Mneeley..it's not like back in MN, but that is why we are here and not there...all good!

This was the only one in the store and it had really nothing to speak of for fat. I had thought of topping it with bacon but forgot. It took the smoke great. It was a solid chunk of meat.
I was also pleased with the way the pellets smoked.
