    At least a week but if you can wait for 2 weeks than do it, also it wont taste very good right out of the smoker as you found out. Time is your friend.

    Keping the heat source out of the fridge will not drop your temp in the fridge at all just in case you need to add chips or whatever else. I can't wait to see how your build goes.

    No I'll be smoking at hotter temp's, I did a dry test and got it to 300 degrees already but I need to season it, so I'lll try your method.
