I'm actually with you Schultzy I've been thinking of marinading myself. Not to tenderize but to add a little flavor. I want something strong enough to add good flavor but little or no vinegar because I don't want it to "cook" it. Any ideas would be great.
This is a great device, I've been looking for something like this since finding the smoke pistol. Didn't want to have to purchase those stupid bullets though. I'm anxious to hear how it works.
Couple of questions for you though in the mean time.
First, which size did you get?
How do you...
I got the 24" smoke vault because I couldn't find the Big Block anywhere. Awesome smoker, awesome customer service. I would recommend it to anyone. It's nice and solid. Holds heat well easy to maintain. Only complaint is that it's a bit low for me, looking to build some kind of stand or cart for...
I actually had similar results. I'm thinking of a marinade for my next one. Not sure what I want to use yet but definately need something to kick it up a notch.
I get most of my stuff at Home depot. I was recently at the Gander Mountain store in Henrietta and they have a fairly big selection of wood there. Alder, pecan, cherry, apple, I think Oak, of course hickory and Mesquite.
Alot of it was more like wood shavings though, not chunks.
I'm looking for a propane smoker, preferably a GOSM big block or Smoke Vault 24" but really any size will do. Preferably something in rough shape. I don't actually need it to work because I'm using this for a project where I'm building a cold smoker.
I'd be interested in pretty much any block...
Now that you mention it I DID get a spider in the box when I opened it. Was that the special 1000th customer prize??? Sweeeeet!!!
Anyway, back to some semblance of seriousness, seriously! I think a "Wanted" section would be beneficial not even specifically for wood just anything in general...
I may be stepping on a hornets nest here but then again, I really don't care.
I've purchased wood from Heap recently, the reason being I cannot find a reliable source for anything other than hickory or mesquite in my area. Sure, I could have purchased it somewhere else, but I figured I'd deal...
I know you have a GOSM, however, smoke vault makes a cover for their 24" that is canvas, I got it for my vault, very nice cover, has bungee time hooks at the bottom to hold it one, it's fitted for the vault but should work just fine with you GOSM.
It is a bit more expensive though.
I just did one last week, it was about half a filet, roughly 2lbs I think. Maybe a little less, followed Erain's recipe for soaking and curing and then threw it on the smoke vault at about 225 for an hour. Turned out perfecto!
Thanks guys for all the replies. I'm looking to do some cold smoking. Mainly fish but possibly some bacon and jerky in the future too.
I have a 24" smoke vault already, and I've done fish on their and the wifey loves it, just wants some "real" smoked tuna. I had posted on here for some ideas a...
Another great idea!! I think they actually had one of those at gander mountain by me. Although, financially, I'll probably just do the hotplate idea. Thanks for the suggestion though.
