    I'm actually with you Schultzy I've been thinking of marinading myself. Not to tenderize but to add a little flavor. I want something strong enough to add good flavor but little or no vinegar because I don't want it to "cook" it. Any ideas would be great.

    I get most of my stuff at Home depot. I was recently at the Gander Mountain store in Henrietta and they have a fairly big selection of wood there. Alder, pecan, cherry, apple, I think Oak, of course hickory and Mesquite. Alot of it was more like wood shavings though, not chunks.

    Looking for a GOSM Cover

    I know you have a GOSM, however, smoke vault makes a cover for their 24" that is canvas, I got it for my vault, very nice cover, has bungee time hooks at the bottom to hold it one, it's fitted for the vault but should work just fine with you GOSM. It is a bit more expensive though.

    Hot Smoked Salmon temp & time??

    I just did one last week, it was about half a filet, roughly 2lbs I think. Maybe a little less, followed Erain's recipe for soaking and curing and then threw it on the smoke vault at about 225 for an hour. Turned out perfecto!
