Very nice Dave , and on the Q is a nice treat in our winters ( except lately it has been well above 0 a lot the last couple weeks or so , even on the East coast )

These were very nice and on the Q over the hot flames , just love that smell and taste.
But I am like you, if these were not gifted to me, it is far and few between when I have them.

Not sure about a stand alone, others might be able to help you out with that.
But if you already have a BBQ that works for you , that is what I use with a pizza stone in it.
I use it for pizza, calzones breads etc in my BBQ.
Just a thought, that way you don't have to have more space for...
Half of my smokes / cooks are no where near traditional, lol.
But yes that is why I love the lime and or lemon flavour, ( well i really just like the tang even vinager ) helps the sweet or spice of the meal also.
Now there is a grilled cheese I could really shove down my throat. :emoji_yum...
Like said , I would remove the header drywall to see if Beam is in there , but it looks like you can remove the 2 side jacks ( studs ) and maybe fill back in with plywood to bring back out to flush for your new drywall. If you are not removing the top area. Are you? As there should be some kind...
