Now for the learning part. These ribs would have probably passed the 90* bend test after removing from the foil. So I assume they were already done at that point.

I have a few days off of work and it's over 40 degrees, so had to try a smoke.
Picked up 2 racks of ribs. Trimmed the fat, but didn't trim down to St Louis style. (One good trimming and boning knife each just got put at the top of my list.)
smeared with mustard and covered with Jeff's Rub...
I'll let you know when I do some grilling, but might be awhile.
I see that they sell the grill grates for the yoder now for $100 and a thermal jacket for $169. I will need to get one of those before next winter probably.

I didn't quite get as much smoky flavor as I would have liked, but with the cold temperatures and wind I had to burn the pellets a little hotter than I would have liked. So not as much smoke.
