    Yup, the Holland is a gas grill that basically works like a convection oven except it has a pan between the cooking surface and the burner to prevent flare ups.     The Holland is not adjustable in regards to temp. It cooks at 400+/-. However, you can close the drain valve and fill the drip pan (between the burner and the meat) with water to give it a moisturizing/steaming effect.     I have a Holland Epic and LOVE it. It's the easiest grill in the world to use and produces excellent results for the amount of effort required. "Smoked" a 5 lb butt on it this weekend using the Holland brand flav-o-buds for smoke. I was surprised to say the least!
