Dingle.. mead, known as the 'oldest fermented beverage,' is a honeywine, basically fermented honey. :) The taste is indescribable, and unique.
You must recall in Beowulf - great mead halls? That's where most first hear the word...
You can find it in some wine/liquor shops, but...
As soon as I saw the subject, thought mead too... all you'd need is 3-4 lbs for one gallon of sweet... but I also think a smoked flavor would enhance a nice dry mead as well.
I think the result could be nice. Like toasting/smoking malts for beer, the smoke flavor won't be affected by...
Anyone need a refill? ;)
I just started coming back to the SMF because when I first joined, there were some folks on here who were bent to be 'the best' and made everything some sort of competition.
While I can appreciate learned knowledge, "those" folks also 'ran off' a good number of new...
Usually the smoke helps keep them away (if you've got the smoker fired up)... We also set up a few tiki torches with the citronella flavored fuel... it seems to help some...
Containerized two 'mater plants this year - my first time trying this.
A Roma Grape and I think the other was called 'Big Boy.'
Roma Grape seems to be super-bug free and I'm now picking 3-4 a day... this little plant is a producer!
The other had a tough start for some reason, but now has...
Hard to say what our fave summer brews are...
What we have in the fridge right now is:
Atlanta Brewing Brown Ale
Atlanta Brewing Double Chocolate Porter
Duck-Rabbit 'Rabid Duck' Imperial Stout
Breckenridge Vanilla Porter
Paulaner Hefe
and a few bottles of Sam Adams Octoberfest (last years!)...
Oh, the lessons we pick up when trying something new. Saw some great looking chuck roasts at Sam's Club the other day, tempted to go get a couple.
As for how much wood, I have a GOSM and use the smoke box that came with it... found out that if I don't cram the box full of chunks and splinters...
I have grease pool up under the legs of my GOSM also, I figure it's grease that's collecting on the smoker walls as food cooks (splatters and pops) and just runs down and exits through the corners of the smoker.
The mat idea sounds good!
Glad you got things rolling along! I got the W-M $98 GOSM and love it. I still use the original wood box and have had not problem getting TBS in a decent time frame.
I've had my GOSM for about a year now and all the stuff I've learned. It;s all been good! And the food resulting from it too. :)
Since my other hobby group deals in medieval studies... they're already clamoring for the recipe too...
I'm looking forward to the recipe...
Another reason to start making my own sausages!!!
Doing two pork butts and two fatties today, tomorrow will be a turkey pizza fatty (by request!) and two beer can chickens... maybe more fatties, depending on what the guys feel up to... pics from both days coming soon.
Saturday is National Teach Someone How to Homebrew Day, so we may brew up...
We used a Dremmel reinforced wheel to cut the top out of the keg I have (used to brew 10 gallon batches of beer), and it did very well... makes quite a racket*
Got a friend who has one of the qtr. kegs and he keeps asking me... what can we do with it?
Now We Know... :) Thanks for the...
As Debi and some others have said - they're great plain, too.
I've got two 'naked' maple JD chubs in the smoker now... one is earmarked for a big pancake breakfast for a few friends in the morning... we love to slice it and have it with breakfast. Someone also mentioned that they're good...
My first, and only so far, is a GOSM; like has been said before, just under $100 at Wal-Mart - may be able to find some marked down now too...
To me, it's just the thing to learn about the basics... and I'm already looking for my next smoker - something bigger!
