I've heard some add rub, some don't... I've used a little rub (over a slathering of mayo) on beer can chicken... it all comes out good.
Many also brine their chicken, I've yet to do that, but will soon.
I think one thing to remember about smoked chicken is the meat turns out pinkish - but...

It is interesting, you look at other BBQ/smoking forums and it's not mentioned... even if it's not called a fatty... and it's so awesomely versatile!
But wow, everyone I've served it to just loves it. We do a few to take to medieval events - as well as buckboard bacon - and it adds that...
I've used the turkey italian sausage, it tends to fall apart too... I like the breadcrumb idea - will try that next time we make my turkey sausage pizza fatty... also going to mix the turkey sausage with some regular sausage for a more firm fatty.
Reading stuff in a book is one thing, but SMF gives you a place to ask questions about your unique situation (and usually get a pretty quick answer!)... so c'mon, tell us about it! :)
Cowgirl's right - Can't beat the folks at Got Mead - Vicky and everyone on that forum are great. Lots of great mead recipes and mead news there too...
If I ever make it to SMF gathering, I'll bring a half case of mead along. :)
