You could check them at that point... see what they look like... if you've got the visible 1/4" bone sticking out, take them out for the 1 part - and do that for 30-40 minutes - time is a guideline, not a set in stone rule.

I know a lot of recent posts have been about stuffed fatties, but the simple plain, naked fatty is always a yummy joy too... unwrap and put on the rack - simple as that.
We always add a couple of these anytime we have the smoker going.
They freeze...

I have a small pair of needle-nosed pliers reserved for pulling rib membranes off... Just another q-tool.

Hey and welcome to the forums... cleanup? About all I do is the racks (they get a good cleaning after each smoke), and wipe off certain areas in my GOSM that seem to collect grease. And the water pan gets a cleaning and new foil wrapper...
Still looks good!! Cap't Dan and Geek with Fire both have great threads about rolling fatties... should give the thinner wall you're looking for - and it makes the whole process so much easier.

Thanks for the ABT recipes... someone posted on here a long while back about a nifty little pepper holder for a grill/smoker - one that would hold the peppers upright for cooking... anyone have that link again?
Sounded like a fun time in the kitchen... and it looks great! Just think, when she goes off to college, a smoker will be one of the 'must haves' for her.
