My first brisket was a small flat which is somewhat easier to smoke. I think it was around 11lbs. Still took almost 13 hrs including wrapped time at 225*
I did my first whole turkey a couple months back for some friends. Ended up perfectly juicy! A buddy of mine told me it's the only way he'll want turkey again. I might be busy come thanksgiving.
I use the 3-2-1 method at 225*-250*. Never checked them while in foil. Good advice on the bone tug though. I'll try it out. Just think I need to keep em wrapped a bit longer.

Looks great! I don't like mushy ribs either. I have always foiled and still haven't mastered mine yet. Still a bit tough but tasty. I'll try without foil next time.
