yes its worth it to be a kcbs judge,competition teams turn in their very best product and you get to sample it first. as far as cooking class's go:ROD GREY 2009 kcbs champ,JOHNNY TRIGG ,MIKE DAVIS, MYRON MIXON ,all champions many times over. class's are not cheap! BUT they are worth it!
something you can do is make a map of your cooker temps. do like they said in above answers but move probe around to see your hot spots and cool spots,left to right,front to back. then each shelf, the best thing to know is your temps in all spaces inside.
I guess that's why I just got cookshack FEC with IQ4. not smart enough to figure all that stuff out. and yes I know I spent far more than I should but it makes life easier with all those controls. i just let cookshack figure all that out for me.
I like chicken thighs myself. I started putting parkay in the bottom of my muffin pan, Don't tell myron, this is our secret ok? then cook to 165* and sauce them.
