    How about a meat, fruit, and veggie throwdown all in one. You could post a meat of choice for the throwdown or leave it open. Seems like if the meat choice was left up the person to do with fruit and a veggie we might get more entries.

    Nice job with the AMS. Cold smoke then throw on the smoker, no brine or cure, couldn't be much easier for smoked salmon quickly. Good looking salmon. I'll be trying this soon.

    I use pecan on most of my smokes and everyone loves it. I think of oak as a fuel wood as stated before.
