Would taking a course in welding at a Tech college be useful for what I want to do, mainly learn to make a smoker, deer stands, etc. Any good suggestions?

I just got off the phone with the supplier. I ordered th 12" on the 8th, and still have not received it. I was told today that they are putting it through testing since it is a closeout, and that I should be getting it sometime next week, Has anyone else had the same problem?

The only question I had when talking to the representative on the phone was about getting replacement parts since the unit was on closeout. He said there should not be any problem getting parts because their company had plenty. In other words when all replacement parts are gone their gone...

A friend of mine used to use several pieces of wax paper with a rubber band to hold the paper. This would help take up space between the plate, and the stuffer's wall. The only drawback is after a while the paper becomes very soggy, and you have to replace the wax paper. I got tired of doing...
I saved your picture of the gas valve mods. I am going to try this because I wasn't to be able to smoke summer sausage and this should allow me to lower the temp to within a suitable range. Have you experienced any flame blowouts due to lowering the flame?

I just ordered the Weston 12" meat slicer, and will let the forum know how well or bad it works. As for the Hobart, no one can deny the quality, but you will pay fore it's name. As some say you get what you pay for, so I will know soon if it holds true for everything.

A friend of mine who uses his smoker almost every weekend says pecan shells impart a bitter taste in meats. When he uses shells his choice is Hickory nuts. The nuts are very hard to crush, but when you do crush them along with the meat inside they have an oil that mixed with the shells does...
