I've never even considered making bacon until I joined this site about three weeks ago after getting a MES 40 for Christmas. Now I found a pork belly supplier locally and I can't wait.
Welcome and post lots of photos the next time you do it.

Dave,
You've come to the right place...as long as you are willing to take the time to experiment and buy the meat...that's most of your battle..lol You'll be impressing your family and friends in no time.

Tom,
Welcome to SMF and you will spend lots of time and learn lots of stuff to excel your smoking.

I too just bought a MES smoker (40 inch) and has really lit a fire under my smoking (no pun intended) but I have always wanted to cook a prime rib roast on my Webers but have been afraid to invest that kind of money into an experiment.

Welcome to SMF.
You will probably get a wide range of suggestions on what to start off with...my suggestion is jump in and smoke whatever you are hungry for that particular day
Is your smoker propane, charcoal/wood or electric?

I too have the 22.5 inch weber--actually two. The oldest one is almost 30 years old and like a member of the family....lol!
Anyway, get ready to take your smoking to another level.
