    Hello from Texas

That's sweet. I don't know how it will affect your temps when there is no wind? I usually have my door slightly open and when my wood burns down to coals I will usually close it. But when its windy I usual just move my smoker around since it isn't the biggest and I'm not constrained to one spot...

    Help with smoking pulled pork!!

Same as stated above! What temp are you smoking at? I did mine at 225-265. Also I smoked the pork till the Internal Temp (IT) got to 160 and then wrapped it in foil till it hit 205 IT. I believe it also stalls around 160, so if you are not going to wrap it dont get worried if they temp doesnt...

    Drill Bit

Definetly use a small drill bit first for a pilot hole. I feel like the gauge is about 1/2" but I cant really remember. a Uni-bit is super helpful and easy to use.

Damn, I'm glad I started this new hobby!

Welcome! Im knew to smoking also but one thing that is key is having a good meat probe and a thermometer for inside of the smoker. I did pulled pork and wrapped it after about 7 hours and cooked to a temp of 205. Came out perfect! You only learn from your mistakes. Just gets better from here...

    1st Beef Ribs

Thanks! This was one of my favorites. A lot of meat and flavor. Also cost about as much as a brisket but with half the time? It was well worth it to me.

    1st Beef Ribs

Smoked some beef short ribs on friday for my brother who was visiting. I have to say they came out amazing. Even though I had a time crunch, I did not let them rest that long and was not able to put them back on the smoker to crisp them up. It took about 7.5 hours at 260-280. Smoked 3 hours and...
