    MES+AMNPS vs Bradley

MtDon, Good choice. Another feature the AMNPS will provide is the ability to cold smoke with the MES smokers.

I am wanting to get an electric smoker!

MES30 is first and only smoker. Has been great experience. Bradleys have good features cold & hot smoke built in. Just seems expensive to operate with their smoke pucks. AMNPS would probably work. What\how will you smoke the most ? That will probably help in the decision making. Won't go wrong...

    MES30 & AMNPS

Todd, I'll give it a try this weekend. The ANMPS was on the lower 2 rails just left of the element. I had two rows, the first row smoking was on the far left side, smoking towards the right. So I should try smoking the row in the middle so it's moving away from the element? I haven't had to use...

    MES30 & AMNPS

My first use of the AMNPS was a short smoke. Just one row. Worked flawlessly. I placed the AMNPS on top of the two rails at the bottom, just left of the element and chip tray. I pulled the chip loader out and the row burned as advertise. This last weekend I smoked a beef brisket which needed to...

    Brisket Advice

Okay, Brisket came out sooner than expected. I didn't foil. Cooked til 200. Wrapped in foil and let it set for about 45mins. Brisket was moist and flavorful. However, a bit on the tough side for me. Everyone else enjoyed it. Would wrapping at 165 helped the toughness ? I didn't wrap because I...

    Brisket Advice

Trying my first beef brisket in my MES30 today. Started late, but I couldn't wait. It's a 5lb brisket. I had used the mustard and dry rub combination. It sat in the fridge overnight. I have it on the top rack. Right now temp is 226, MES reads 240. I plan on wrapping it at 165, cook til 200, then...

Help On Smoking My First Whole Chicken Please.

Smoking my first beer-stuffed chicken right now. I set the MES30 to 275, my probe reads reads 330. It's on the same level as the chicken. Wondering which is correct. I know if the skin comes out crispy. Have another probe in the breast. Shooting for 165 before pulling. I did have a strange...

    MES 30 & Sand

DOmak, I'll keep that in mind. I've only smoked twice on my MES30. The first time, the ribs were too salty. I made a homemade rub but didn't measure a thing (wrong). I managed to overcome the salt by washing the rub off then and finishing wrapped in foiled with sweet juice. My second time, I...

    MES 30 & Sand

I'm a newbie to smoking with the MES 30. However, I have to lean towards keeping water\juice\beer in the pan. Moist is moist. As far the chicken, I'll plan on finishing in the oven for a crispier skin. Just placed my order for the AMNPS. Anxiously waiting.

    MES 30 & Sand

delta, thanks for the idea. I'm going to try chicken this weekend. If I don't get the crispy skin, I'm going to try and remove the pan. If it helps with the bark, it should also help with the skin. I would think keep water in until finishing for last 30- 1hr. However, I think you'd want to up...

    MES 30 & Sand

I've read numerous postings from smoking beef to fish on this site. Also read discussions on wether or not to leave the vent open or not. I've used the smoker twice. Each use, the meat was tender and juicy. I only had issues with my rub\sauce. Either too salty or not enough. My next smoke will...

    2nd Use...

Thanks to all for the replies. I'm going to try and tilt the unit towards the rear a little, to help the drain. The brisket came out very moist. Took 6 hrs, I pulled out at 190 degrees. It was also my first smoke with 2 probes. One for internal temp near the meat, the other for IT of the...

    2nd Use...

gotarace, Do you think it's okay to have a pan to catch and hold the grease vs. draining out the rear ? I'll be replacing the pan every smoking cycle. Wondering if it would be safe to leave for in there for about 10-12 hrs. Thanks,

    2nd Use...

Planning my second use of my MES 30. Going to do Corned beef brisket. On the first use, I wrapped the drip pan and water pan with foil. Clean up was a breeze. However, I noticed there was grease under the bottom drip pan which didn't drain out the back. I didn't expect that. I guess the unit...

    Temp Differences ?

TJ, I was just trying to get close to the MES probe to check the difference. So at 206, it's actually 241. I'm okay with it 35 degrees off. I'm always going to have a separate temp probe inside the smoker and another for the meat. I think I need to return the unit or call Masterbuilt. As long as...

    Temp Differences ?

JimmyJ, I placed the probe near the MES probe. Here's a pict of the setup. I checked it at 170 and 200. At 170 it's the MES reads 12 degs low. At 200 it reads about 35 deg off. I'm okay with just relying on the external temp probe. Should I consider a replacement unit ? Reading
