I'll be putting the offset to bed for the winter here when the weather turns south. I picked up a WSM and plan on smoking all winter with it. I'll be able to set up the WSM on the covered front porch. Couldn't bear the thought of not having any Q all winter.
Thanks guys, one of these day's I'll get the timing down so I can actually hold one for a few hours. These long smokes have been fighting me all summer.

As promised here are a few pics of the final product. Finally pulled them off the cooker at 11pm. Wrapped in the cooler for about an hour and pulled a little after midnight. This made for a long day (15.5 hrs) but it was well worth it. The meat rally turned out good this time.

Well since this looks to be a long night, I am now wondering about holding time for my butts. How long do you folks think I can hold them towel wrapped in the cooler? If they keep mis-behaving I was thinking about just holding them overnight and pulling in the morning. Then I could have a pulled...
Well 12 hours in and guess what..........the dreaded double stall. Finally bit the bullet and foiled em. Both are stalled in the low 180's. Haven't had to deal with the double stall yet but have read about it here on the SMF. Hopefully they will start coming around soon. I guess pulled pork...
Whats up SteveO! I just put mine on a platter and then cover with plastic wrap. Good luck on your smoke tomorrow. What time are you getting up? A 9 pounder is gonna take you awhile.
