i have been wanting a larger smoker now so i can use the different temps in the smoker without tuning plates. as in throw a brisket on the end of a big ol smoker and load up the firebox and take a nap! or maybe a reverse flow smoker. but as of now the old country smokers are good for what i am...
you have the wrangler i see. i thought you had a pecos due to the title of this thread haha. i am using 5 of them right now. i am still messing around with them. if you notice there is a hot spot on the exhaust side. i think our stacks are so wide in diameter it creates big suction so sucks all...
i did two racks at about 3.7 lbs each. I put rub on it and stuck it on the smoker. maintained around 230 to 250 for about 3 hours. wrapped it up in foil with squeeze butter, honey and a little more rub. did not have brown sugar at the house. put it back on for about hour and half. temps went up...
yeah i have been playing around with some that i got made. 1/4 inch thick ones. unfortunately every time i think i have the heat distributed evenly it will change on me and i have to play around with the plates again. i might just take them out and let the smoker work like it was made. I have...
I was wondering since my tuning plates are very close together near the firebox. Does it affect the amount of smoke and flavor that the meat gets versus the area that has more opening where the smoke will come up more. I have a old country wrangler.
How is the pecos as in holding the heat? My wrangler has smaller cooking surface. Thinking back I wish they made the pecos with the same thickness as the wrangler.

Ask for Scott. Tell him he just did some tuning plates for Asian Jason. He is a nice guy. He said he can do anything you need. Big or small. I'm thinking of making a...
you want to start with smaller spacing between your plates near the firebox and gradually get larger spacing towards your exhaust. for my wrangler and your pecos our exhaust stack is so wide in diameter that i feel it sucks a lot of heat towards that side quickly so in my wrangler being shorter...
marv, i have the old country wrangler. my dimensions were 4 inch by 15.75 inch on my tuning plates. i got 5 of them to tune my wrangler. i have them at 1/4 inch thickness. you have to measure how long you need your plates to sit about half inch or so above the lowest point of your deflector...
As done before in this thread or another I took their advice and added the spring with a new bolt so we can adjust damper and make sure it stays and doesn't have a mind of its own!
