I have a maverick et733. Helps with not having to sit outside. But it will drive you crazy as you see the real grate level temps ! Anyway I used three tuning plates this past weekend. Did two separate cooks on the same day due to the wrangler size. Did two St. Louis racks and the after that did...
which would you prefer to do a build with? is there any benefits to either? i know the pipe could be as thick as 3/8 inch but is that necessary? and i know the propane tank is usually at least 1/4 inch thick.
Also are we talking at a couple thousands of dollars to build one on a trailer? any...
i think you want to hold as steady of a temp as you can. but this is hard for smaller smokers as i have seen. for me i now use three tuning plates. run the exhaust wide open and intake damper wide open. i try to control my heat by putting smaller splits of wood instead of the bigger splits.
well i ended up doing 2-2-1.5 and no sauce mopped. used pecan wood. in the foil period i used brown sugar, honey, and squeeze butter. came out awesome. i liked how that last bit on the smoker unfoiled really tightened em up and was great
i wish i had the Brazos model. little bigger than the pecos but has 1/4 inch steel. that way i could throw some birds by the firebox and throw a brisket and or butt on the other side
looks good man. if you take out the charcoal support and put the fire on the bottom of the firebox you might burn a dirtier fire. you need some oxygen underneath the fire. let it breath. and its easier to scrape out ash under neath the grate.
yeah i will try smaller splits this weekend for some picnics/butts. By the way the stove gasket rope just fell off the next day haha. Dont use the gasket rope !
