    dumb semi-newbie question, but is 22 hours a bit longer than usual?  I am cooking two (I'm guessing they will be about 8 lbs each) on a 22.5 WSM next weekend.  I was thinking more like 12-16 hours, 22 seems long.  but I am pretty new to this

    I'll say this - before I got my WSM (which BTW I have only had for about a month....) my wife did used to bring home a nice package of the Costco Pulled Pork every once in awhile.  I did not have high hopes, I assumed it would be passable but average. It isn't.  YES still not the same as pulled...

    Ya I may have to invest in a good vacuum sealer. While I am not suggesting by any means this is as good as home made pulled pork, Costco actually sells an amazing pulled pork that you prepare the same way. it is sealed in a vacuum bag and you heat by boiling then cutting open

    You say it is the two of you.  Just curious, will it always be the two of you  Young and close to starting a family?  Or way past that.  You don't have to answer on the board... If it is just the two of you.  heck if the two of you grow to a family of 4-5 or you have 4-6 folks over for a meal...

    Walmart had one on a final markdown for $1.10 lb. last weekend. the Sell By date was just 2 days away but still looked just fine. Went into the freezer, will make it in a few weeks I think.

    Ok ladies and gents it's time for Round 2 on my new WSM- this time a 9lb BB-

    ps I am new to this as well but have done a BB already myself.  One thing I have read a lot on here and also experienced - don't freak out when you hit the stall if you do.  may get a period where the temp doesn't move for 2 + hours.  happened to me.  happens to a lot of folks.

    you asked about bottom or top grate.  I don't think it matters but I would use the top only because it is so much easier to access.
