Is there a cardiologist in the house?

It's beautiful. Makes my blood slow down just a bit looking at it. Have to ingest some salt, raise that blood pressure and blow the blockage right through :)

What Wood to use for Turkey? Time?

Red or white oak work really well. Apple as well. I would be concerned about using Mesquite as it is a really strong flavor.

Which wood should I use on CB?

I used apple for my CB. I like to use light sweet woods with pork, maple, apple, etc.

I won a 40" Masterbuilt Smoker on the John Boy & Billy Show!!!

Being from the north I have no idea who these guys are but great score! I'm more a purist so I would sell the unit and get a stick burner or something else along those lines. Just what I would do. I've read posts of many people on this board and a ton of them have MES and love it. If you...

First attempt at Canadian Bacon - W/ QView

Salt content was still a bit high, but definitely good! I had the butcher slice it up on their slicers and brought it to work. Got the approval from everyone here. Now it has to pass the family test.

First attempt at Canadian Bacon - W/ QView

Tracey, Total brine time has been 13 days. As I said at the beginning of the post I'm sort of duplicating what forluvofsmoke did on their first Canadian Bacon. The size of the loin seemed to be about the same so I just went off the timing given in that post. No real scientific process there...

I've been looking for a non-metal tray i can put at the bottom of a plastic container I've got to keep the bacon elevated off the bottom of the tray and out...
