    Dialing in the Vortex

Nice! I have never used the Vortex.....but I have piled my coals in the center for the same effect. You can also put the 2 Weber charcoal baskets in the center like that for the same effect also. In fact, Weber even mentions that on their basket instructions....I do have a set of those that...

Pellet Smoker - Need advice on first one

No Prob. The Fireboard 2 Drive, a Fan from BBQ Guru, will set me back a little over $300 but that should give me the same level of convenience as Pellets.....I might end up with both though....SHhhhh Don't tell my wife! LOL

Pellet Smoker - Need advice on first one

Any thoughts about maybe getting a controller for that instead of another cooker? That's what I am considereing for my summit charcoal or adding a pellet cooker...a fireboard drive and a fan....

    Pellet vs charcoal smoker

One other thing.....the pellet grills parts reliability is always a question I have, especially lower cost units. How often to auger motors, fans, hot rods, etc have to be replaced on a pellet pooper, and that adds cost whereas with charcoal you can get away from the need for all that stuff...

    Pellet vs charcoal smoker

How does a pellet pooper compare to running charcoal without wood chunks? Still less smokey than that? I have a large 24" x 48" 1/4" steel home built offset (documented here on the site) but I also have a Weber Summit Charcoal that I sometimes use in the smoking configuration when I want to...

Can't decide on new smoker! Halp!!

I am thinking about rounding out my arsenal with a pellet grill. I have a Weber Genesis E-330 (previous generation) for whatever I want to cook on a gas grill (less and less all the time). I have a green Weber Premium Kettle, 22", a Weber Q1200 portable grill for tailgating, camping, and what...

Where do I get some wood for a stick burner?

I am living in Williamsville NY myself....near you! I know this post is really old but you never know when someone else will read it wondering the same thing. I get Hickory from a guy in East Aurora that also removes the bark, but it is a little more money. I buy a half face cord at a time...

Installed the Tel-Tru on the Bayou Classic.

I have 2 Tel Tru thermometers on my home built smoker. When I tested them with boiling water and against the thermapen they were spot on. They are good quality too...made right in Rochester NY

I am pretty sure that there are some high end steak houses that use a very similar method actually.

    Octagon Offset Build (24" x 48")

So.....other than answering questions or helping out with sharing build information I won't be adding more to this thread since I have pretty much documented the build and the results. But one thing everyone I think might wanna see....is the beast in use...some asked for that early on in the...

    Octagon Offset Build (24" x 48")

Thanks Warren! Well...to be honest I am not too much of a Welder myself...my dad was a HUGE help in that department, but this was fully my design / concept and I did everything else (cutting grinding design, least waste layout with materials etc) and some of the welding. By profession I am an...
