BBQ Guru on a mini WSM?

I'm starting to gather all the items needed and had a question about the wire to use for making the charcoal basket. The only wire I could find in Lowe's is galvanized. Will that be a problem? This is for attaching the expanded metal to the charcoal rack.

Does anyone marinate ribs before smoking?

It's really all about what you like. I'm sure marinated ribs can be delicious, but I prefer a spicy dry rub with a little bit of sugar to develop a nice bark. I apply the rub about an hour before they go on, and smoke with a mild wood until the bend test tells me they're done. (no foiling) If...

BBQ Guru on a mini WSM?

Well my Craigslist source dried up. I shouldn't have told him I was going to build a smoker with it, now he wants to keep it.  Anyway, I'm going to move forward with this, it will be a good winter project. I love my Good One smoker, but have been looking for something that is better on fuel. ...

BBQ Guru on a mini WSM?

Thanks! Yeah, I bet it would just be on for a second or two then shut off...lol Ah, I wasn't thinking about room for charcoal, good point. I will definitely look over all your threads before I start building. Awesome, this is very helpful to see the placement of the bulkhead adapter.Did you...

BBQ Guru on a mini WSM?

Thanks Chase! If I didn't already have the guru I probably wouldn't bother, but it should be fun. I was just going to cut a lot of holes in the tamale pot, why remove the entire bottom? What do you use for a diffuser, then?

BBQ Guru on a mini WSM?

Hi! Just found a Smokey Joe silver on Craigslist for only $10, so I'm going to build a mini WSM. I'm wondering if it would be worthwhile to hook up my DigiQ BBQ Guru to it? It's been sitting in a closet gathering dust since I stopped using the CharGriller for smoking. Would it be a useful...

Reverse Sear New Yorks, crispy skin taters, and grilled corn on the cob! (Q-VIEW FINALLY!)

LOL I know what you mean, one plant sure puts out a lot of peppers! Anyway, thanks for the tip on grinding it up with the salt, that makes perfect sense!

Reverse Sear New Yorks, crispy skin taters, and grilled corn on the cob! (Q-VIEW FINALLY!)

Beautiful job!!! I just love cherry wood on beef....yummmmm!  I was going to ask about the ghost pepper sea salt too....no Whole Foods around here so I may have to try something with my garden full of Thai Chilis. I wonder how you would go about infusing salt....?

    Grade my brisket cook

Wow, that really sucks that it dried out. Briskets are too much work for that to happen. Guessing as to the cause. You injected it 4 days ahead of time with broth and butter, which both contain salt. Salt tends to draw the moisture out of the meat. So maybe that was too long for it to marinate...

No foil spare ribs and mac 'n cheese

Thanks!!! Thank you!! The mac n cheese recipe I used is a slightly modified version of Martha Stewart's recipe. Below is the original. This would fill a 9x13 pan. I made half the recipe. (8x8 pan) Instead of the white bread, I used Japanese bread crumbs (panko). I also used a little less milk...

No foil spare ribs and mac 'n cheese

Thanks Red!!  Thanks Dirtsailor!! The rub I used had a little brown sugar in it too, which I think helped with the bark. Anyway, thanks for the help!
