Look what my wife/son gave me!

Thanks all!!! There was zero breeze when I seasoned it so the smoke poured straight out, very nice except the mosquitoes were awful. I managed some beef ribs on the cooker yesterday and then the same night my low back went crazy on me again and I've been on ice almost ever since.    A little...

Look what my wife/son gave me!

I've been tinkering with my UDS for a little while and it's not going anywhere, but I got a new toy! I've never used an offset, but after seasoning it I learned pretty darn quick. She must have gotten tired of listening to me talk about an offset so here we go, it was cheap and on sale at...

    help with beef ribs please

Beef ribs are hard to find around my area for some reason. The only ones I could find were back ribs from Walmart, and they had about as much meat on them as your finished product. I won't spend money on that nonsense. I've since been hounding the local butcher shops and now they are starting...

    Stick burner UDS?

Sorry for the late reply, stinkin' low back problems. Nice looking cooker and food product you have there FWI! It's been a super, super rainy and humid summer this year so I'm thinking maybe my wood isn't as dry as it should be for being aged 7-8 months. Hence the flare ups and/or making...

    Basic Pulled Pork Smoke

No, I love all of it actually. Concentrated flavor!!. Just chiming in that long smoked lard makes the best tortillas. To clarify, we usually use the 'gel' for gravy otherwise toss it in some chili. :)

    Basic Pulled Pork Smoke

Nice instructions, can't mess with that! I always like to pop pork juices in the fridge as well. I save the layer of lard on top (not the gel) to make homemade tortillas. The smoke just takes them to the next level.

    Stick burner UDS?

Did a little searching and didn't find much information. I'm running a UDS stick burner that is pretty, well lets just say it's not fancy. Makes great food though! I burn ash in it since it's (laying down) everywhere on my property. I'm just wondering what others do to control temp, or if ash is...

    Smoking for our Wedding

Congrats, for the wedding and the food!! From the looks of it you have a keeper if she's letting you spend that kind of time at the smoker! :D Everything looks awesome, lots of work in that meal!!

    First Brisket Smoke

Sounds like you are going in the right direction! I'm not a lot of help as I haven't done one 'yet' either. But just thinking about it with my rusty/needy stick burner makes me a bit nervous too! Good luck and I can't wait to see how it turns out!

Looking forward to the results! Any time I did beef ribs I just wrapped them, no liquid. I might have to give that a shot next time though! :)
