    like dirt guy said , you place it at the top that would its quickest escape route. at grate level or lower it rises and then has to come down, and being circular shape it will smoke your food more evenly before tbs escapes. and also help hold temps better.

    unless there is a bunch, I don't trim cause there's not that much on it. a ham or shoulder I would, its pretty thick and covers most of the meat not allowing smoke to penetrate.

    Anyone tried the cookchack rubs ?

    when I bought my FEC's they came with rubs and sauces. the spicy chicken rub is alright, but can get spicy with to much on chicken. the rib rub is good on ribs and pork butt, the brisket rub is good too. they're all good ,but I prefer other brands for personal use and comps. but since I got 2...

    what happened to the other 10#'s, its going to be difficult but rub heavy, wrap with liquids in foil at 150*,pull at 205*. its difficult to do a small briskit like that ,but good luck!

    they did'nt make it easy on you did they? being easter, you don't know who wiil be there or leave early for family functions. my guess is pork butts , baked beans, meatloaf, just try to keep it simple.
