    the thermopen is a great investment . when the probe is folded shut it is off, open it is on, there are no controls or memory of previous temps taken. but it is so fast with no waiting to read temps on your meat, it's just seconds and you have it .

    I've always got mine at Sam's club or reasors. also got good briskits from food pyramid sometimes. there is also meat markets like perry's or a few others , just think of names right now. hope this helps.

    I agree with all above answers, paper towels work great, and if left on wont let rub or smoke penatrate. sometimes it may be hard to get all of it, but thats ok just get all you can. just a much better product when done.

    Competition Smoking on a propane smoker?? Is it done??

    LeeAnn does use a southern pride cooker, the propane/gas is disconnected, and uses charcoal and wood as heat source, also the electric is only for rack rotation and convection fans inside cooker, not for heat source. hope this helps.

    for pellets i use BBQ'ers delite,good quality and flavor. as far as treager , i've never used one but have cookshacks and louisana pellet cookers.they all can be good to use.
