John, do you know what this is...

    Pork brine by chance?

    Tomatoes

Believe it or not, been using freeze dried 1/4" or less slices on burgers lately. The juice of the burger as well as the condiments hydrate the tomato and the tomato doesn't sog out the bun. Pretty phenomenal. My wife grows a ton of tomatoes so in addition to making tons of sauce we freeze dry...

    Another gizmo!

It's a Wen 4750. Installed a plug for the generator outside with appropriate outlets inside the house. Can't recall what the plug setup is called but it's mighty convenient.

    Another gizmo!

Dual fuel is the way to go! No gummed up carb! I've never used regular gas in ours and hope to never have to! Fine choice!

Small Prime Rib on the drum.

Mighty fine looking! I'm finishing up a small prime rib after smoking it with red oak until 120, in the sous vide now at 130, then onto the charcoal sear!

Kewpie mayo, what's your favorite use?

Good point about US made Kewpie, 100% not the same! World Market sells the illegitimate (in my opinion) American made Kewpie. Stick with Asian grocers for the outstanding Kewpie! I think it's awesome anywhere mayo is called for, Tuna salad, yes please!!

    Powdered Eggs

We freeze dry raw, scrambled eggs from our girls, they reconstitute very well as scrambled eggs. Our main reason for doing it is to make use of our excess eggs.

RANT - Tired of all the AI slop cooking sites

AI scares me, I don't think we'll ultimately be able to handle it as a species. Too many folks take things as the gospel because they saw it online, the ramifications are quite frightening. Thanks as well for your post, funny if it wasn't so scary!
