I'm new here too. Alabama girl now in TX. You can take folks out of the south but it will always be home and I will always miss it (except the weather).

Help! - Brined Pastrami Too Spicy Hot

I don't know if a soak will pull the heat out but we use a lot of peppers in our cooking and if it gets too hot we will counter with acid and it works well. Maybe a quick pickle on some onion and radish on the sandwich will make it OK for her.

    Greetings from north texas

Welcome aboard. I am interested in trying to recreate a magical pulled pork BBQ from my childhood from a small BBQ shack in Selma Alabama. It was both vinegary and mustardy which does not fit with anything I have found so far. Can't wait to hear what you come up with the recreate your "high"...

    Dinner Dutch Baby

So I stumbled on the Dutch Baby post and ironically was making a Dutch Baby Benedict for dinner. Can't wait to try with some leftover brisket. Crispy bacon and proscuitto, garlic, scallions, wilted spinach and hollandaise. A nice change.

    Bread Flour Shortage?

you can join KA flour online. $6.95/5lb. Free shipping orders over $75 I think. I love their products. If you are into chocolate chip cookies try their Caramel chip blend, semisweet, white chocolate and salted caramel chips. Makes an amazing cookie. I spend way to much money with KA.

    Bacon cheeseburger sub

That looks great. We used to do something similar for tailgating but we mixed a little hot Italian sausage in the ground beef. My son dubbed it the "man burger".

Good morning from El Paso TX

Thanks I really am super excited to get started. I am a pretty good cook and love the science of cooking and now smoking (closet mad scientist). We just poured a new larger patio on Saturday so we have a larger cooking/entertaining space. So just giving the new concrete a few more days to cure...

Thanks he does. He built one for his brother a few years ago that works great but he decided to change mine and give it an offset design rather than the vertical he made for his brother.

Good morning from El Paso TX

Good morning, I am new to the forum and to smoking. I grew up with my family smoking anything that would fit but have not actually done it solo. My husband built me a smoker that is newly finished and I am excited to get started. Hoping based on this design you can give me some "Watch Out...
