I'm new here too. Alabama girl now in TX. You can take folks out of the south but it will always be home and I will always miss it (except the weather).
I don't know if a soak will pull the heat out but we use a lot of peppers in our cooking and if it gets too hot we will counter with acid and it works well. Maybe a quick pickle on some onion and radish on the sandwich will make it OK for her.

As soon as it comes home I will post those pics. We have been waiting for the concrete crew to come and finish pulling the forms, powerwash and seal the patio. It was supposed to come home last Friday now hoping for this Friday. They are here today so fingers crossed.
So I stumbled on the Dutch Baby post and ironically was making a Dutch Baby Benedict for dinner. Can't wait to try with some leftover brisket. Crispy bacon and proscuitto, garlic, scallions, wilted spinach and hollandaise. A nice change.

That looks great. We used to do something similar for tailgating but we mixed a little hot Italian sausage in the ground beef. My son dubbed it the "man burger".
Thanks I really am super excited to get started. I am a pretty good cook and love the science of cooking and now smoking (closet mad scientist). We just poured a new larger patio on Saturday so we have a larger cooking/entertaining space. So just giving the new concrete a few more days to cure...
Thanks he does. He built one for his brother a few years ago that works great but he decided to change mine and give it an offset design rather than the vertical he made for his brother.
