Shot placement and using the bullet (projectile ) best designed for whatever you are hunting is most important.

Seems that brisket or butt should be fine because we take them to a plenty high enough temp ( near or over 200 f )and for plenty long enough.

Often it will take several minutes to get a chunk burning as it should , so a little white smoke can be ok. If after 5 or 10 minuets the white has not died back then airflow , heat , moisture content , are things to look into adjusting.
The two places I go to just hook the tank up and use the screwdriver on the vent. When the liquid starts coming out the vent the tank is full. I pay by X.X gallons / X$ per gallon. And I can see the tank is full.

Sounds like a good plan. I tried some of those briquettes with the mesquite in them and found them strong in my char-griller so I'm sure they were potent in your efficient WSM
