    Finishing sauce question

    I just used a different brand cajun seasoning that I happened to have...Luzianne's. I've heard its not quite as good as Chacheres, but the finishing sauce was excellent so I'm not sure it matters that much. I have yet to try the Lawry's rubs, but I've heard they're good.

    London broil is also very easy, inexpensive and doesn't take too long. Cook it to 135* internal and slice it up - it's great on sangwiches or in fajitas.

    I love my Cookshack. It's an expensive product, but worth the price IMO. The temp control is DEAD-ON, it's very easy to clean and it turns out some good Q.

Even the bark on the outside that falls off the trees doesn't seem like it would produce much smoke, would burn more like leaves do.     Who adds what to their water pan/bowl??

    I have tried red wine, apple juice, beer, chicken broth, onions, garlic, extra rub...lots of stuff. I don't notice much difference from when I just use water with nothing else in it.
