    Congrats to all...that cioppino looked AMAZING and all of the entries this month looked incredible. I haven't gotten on to smoking a lot of seafood besides the more standard fare, but this month's entries have been inspiring me to step my game up!

    Details, details...what did you rub it with? what temp did you cook to? I did a tenderloin only once and it came out terrible compared to what I get on the grill, so I haven't done it since. Yours looks tasty, so I'd love to have the details. The eggs do look quite yummy.

    Jonboat, you should check out the woods for smoking sticky here: http://www.smokingmeatforums.com/for...t=50439&page=7 According to that English walnut can be pretty heavy, but is fine when mixed with other woods. But, you'll find all your wood details on that thread for sure.

    I like to give my fajita meat (same thickness) an hour in the smoker, then finish it with a quick sear on a very hot grill, just putting some crust on each side but not overcooking the meat (I'm assuming you're talking about beef?). I don't usually put it in a pan with the veggies, just smoke it...

    I use wood that still has the bark (and just small branch trimmings) with no issues. Sounds like you have quite an orchard and you'll be stocked with some great smoking woods.

    Looks great and held together very nicely! I'll have to try this. My wife is not a fan of sausage fatties, but loves my smoked meatloaf - this may be one of those compromises that they tell you to make when you get married...lol...Nice job, thanks for the idea.

    I usually do CSRs to temp - pull them about 170*. They might even finish faster than the five/six hours with the 3-2-1 or 2-2-1. Very tasty meat for sure, have fun.

    Wow, I never thought about that, but I'm going to have to try now. I love homemade chex mix. In the oven I usually only cook it at about 250*, so I guess just follow the same directions for smoker?

    Last weekend in February, Whats Smokin'?
