I have them unit. My first guess is that the pellets are not dry enough and your not getting a good, hot cherrry glowing/smoking before you put the tray back in the unit. Preheating your smoker to 275* and put the pellets in the tray while preheating your smoker.
Go to the amaz'n site and...
I have the large Traeger and a 30" analog Masterbuilt with a amaz'n pellet tray and a PID controller
So far, prefer the electric MB w/ tray over the Traeger.
I didn't pay $$$ for the trager so it mostly sits. It does have a single, large cooking surface(which the wife and I really don't...
The only time I've stuff a bird with fruit is when I do Char siu duck and then I put oranges and ginger with the chatr siu rub in the cavity.
bells just went off in my head and now my stomach is grumbling...
would be so kind as to share your recipe and technique?
thanks,
brian
I, and like others, have found that the problem is that once your smoker gets to temp, the heating element turns off. This causes a insufficient amount of heat for the chips to stay ignited.
Also, the reason the chips are black, not grey, is because they are not getting enough oxygen for a...

It's a delicacy from Andean regions of South America.

I have15 boards of hickory/pecan 4"-7" x 8' that are free for the taking. These boards cannot be used for anything other than smoking/burning because they have some powder post beetles.
If interested please call between 10am-6pm. 916-8040175 or post response here.
If you don't have a...
Thanks for the timely posting of this .
The DW was asking about a recipe for these over the weekend.
Recommended temp/cook time? Think I'll try these in the Treager in the next few days

I'm struggling to justify having my Traeger when it goes to smoke flavor and the "pellet in a pellet" comment is quite true. I'm scratching my head as to why it should be this way. I'm not saying what I've smoked hasn't been good, but just lacking.
I will say that when it comes down to "just...
I have the same as you and in the beginning, I was having your problems until I added the 3" top vent and a few 1/2" holes under the chip tray area. I haven't done the mail box mod yet. But, my salmon has come out great, I have noticed that since I opened up the holes under the chip...
I have been going to a sausage/meat market for the past 30 years Called Mattern's Deli in Orange, Ca.
Two of the things that I just love is: one, their double smoke bacon. Double smoked just like the name says
The other is my favorite, Hungarian style bacon. It is cured and smoked bacon and...
The only way mine will smoke is if i have the door cracked about a 1/4"
That is why I added a few holes at the bottom. I use the left over 3" piece of steel that I cut out for the top vent to cover these as needed, which lately has been left uncovered.
BTW, I also added a thin gasket around...
You have the analogue unit(i have one). I found the existing chip tray a POS. So is the temp guage and heater dial.
The A-MAZE-N pellet tray has made my smoking much better.
As for the small exhaust, it is too small and creates a moisture problem and makes the exterior of the meat...
whenever I open a thread, why does it always open to the last reply at the bottom of the page?
it's not the end of the world, but it's still irritating
Thanks,
Brian
If you have a compressor, and a blow gun/nozzle, here's what I do, no hyper ventilating and getting dizzy
lower the pressure down to 1/2 to 1-2 psi until almost no air comes out of the nozzle. You can use almost anything to light a few pellets. Once they have a flame, just barely blow on them...
I have one setup like you mentioned and I drilled a 3" dia hole in the top at the left, back corner. 3" 90 degree elbow turned straight(7-8" high ). I added a few 1/2" dia. holes underneath the chip tray/pellet tray area.
I found that the lack of ventilation(in and out) left too much moisture...
