    You shouldn't need to add more wood. After the first few hours the meat doesn't pick up mich smoke.  Google kamado and guru for a site that's just for kamads and is very active.

    Hope you enjoy the kamado, I've found mine so easy to cook on, that I couldn't justify the cost of a party-q. My kamado holds the temps so steady there really isn't much for me to do other than drink a beer and relax, which is just fine by me. The brisket looks great.
