I was slightly disappointed by the scalding heat from my gasser. (Biscuits got a little dark on the one side but not bad) In order to get the grill to temp I needed a lot of flame, hence having to raise my pan so high. Not sure when I'll try this on the smoker...

If all you're doing is veggies, you can do "water bath canning". Its the only kind of canning my mother ever did for our tomatoes and other garden produce. Green beans always got frozen though.

If it gets really bad, I'd just take a spoon to the cold grill and scrape all of gunk out of it the best that you can. Take a grill brush and clean up those heat shields too, then wipe it all down good with a paper towel trying to get as much grease off the bottom as you can.
