Looks good to me. Only done bacon once, but it seems the more time you give to fridge before and after the smoke only helped it.
I've been wanting to try the maple syrup also along with the brown sugar.

Had to split these into two batches. First batch I seasoned with Cajun. Second pork belly I seasoned with black pepper, garlic powder and onion powder. Followed bearcarvers instructions for curing using tender quick. Make sure to know your pork belly fits in ziplock bags before applying cure and...
The last picture is some fat I cut off to add to the freezer. Planning on buying a Weber smoker 22.5. Going to use the bacon fat to help season the smoker.

First time making bacon. Followed bearcarver recipe and had some help from him along the way.
One mistake is I didn't have big enough bags to lie my pork belly flat to get equal cure. I cut a few pieces in half and put two pieces in one bag. I still have those double stacked bags curing to...
Amnps went out. I only drilled two holes and only turned smoker on for a few minutes to create a draft.
Drilled 3 more holes and going to keep smoker on longer and then turn off. See if it runs out. I haven't done any preparation with my pellets. That might be the next step.
Anything...
Quick and cheap modification for mes to keep temps low while cold smoking using amnps with mailbox mod. Producing a lot of smoke and been running for an hour. Doing a dry run to see how it works.
Did the modification mainly due to Mr T links I read. Mainly the pictures of water filled ziploc...
Been wanting to cure and smoke some bacon for a long time. Curing should start tonight and be ready to smoke next weekend.
I hate waiting. Using the bearcarver recipe to knock this out of the park.

Smells good. I'm not sure it needs to sit. It smells fine to me. I want to save for a couple of events anyway.
I let sit in fridge uncovered overnight and vacuum sealed tonight. Couple cracks in two pieces of cheese. Not split, but curious if that meant I smoked too long or if it meant...
Thanks for the tips.
Mr T.....skimmed through some of your links from other posts before. Main thing I got from those before was possibly doing mailbox mod for cold smoking.
This is all very new. The cheese didn't smell terrible like some threads I've read. Will still give it time.
Hopefully...
Temp got up to 85 and I had to open the door to keep the temp down. No flare ups. Just got hot.
Any suggestions on open vents for temp for cold smoking? I put ice in water pan. Smoked for 2 1/2 hours. Doesn't smell too bad. Resting on a rack. Planning on resting in fridge overnight and then...
I didn't mention that I didn't put any water in the water pan. Would that have made the difference? I just bought some good cheese today and hope to try again tonight. Thanks for the vice.

....smoker wasn't on. It was kind of windy and I think the wind was coming from the direction I had the chip feeder opened up a little.
Just need to watch it closer and I can keep out of wind in a different location.

Got the amnps. Tried smoking last night in cool temps outside. Probably 30 degrees. Checked early on and everything was fine for first hour. Went to pull at 2 1/2 hours and it was melted.
My guess is a flare up. I had pulled chip feeder out a few inches. Other variable was I foiled the drip...
......read somewhere where someone was adding charcoal with chips to mes chip tray. It has worked fine doing it that way for me. Only done a few times. Usually use apple chips. I just really like charcoal. Haha.
I have the amnps doing a dry run tonight and it seems to be working fine. I can...
