Step 1. Ice down the beer.
Step 2. After your butt, sorry, the pork butt sits in the refrigerator over night, allow it to come to room temp.
Step 3. Heat up the smoker. You didn't mention what kind of smoker you are using. I have a MES and take it to 275. It makes it easier to bring it back...
For BB on a MES I do a 2-1-1 method at 225. After the last hour, I cut them into manageable pieces, dunk them in sauce (I prefer that to brushing on the sauce) and sear them on the grill to carmelize the sauce.
My family prefers Babies. I wait until they're on sale for $2.99 or lower, then I stock up. I do more of a 2-1-1 method at 225. After the last hour, I cut them into manageable pieces, dunk them in sauce (I prefer that to brushing on the suace.) and put them on the grill to caramelize the...
Great idea. I just received a replacement unit from Customer Service to replace the one I had for less than 7 months, before it died. The new unit has the smaller wood chip holder. I've seen the Retro Fit replacements on the video of the Masterbuilt website. I'm thinking I might be able to...
Erain,
Your tribute was perfect. I had stepped away from the site for awhile: family visiting, school year starting, and MES quitting. I received my replacement MES (BTW the Masterbuilt Customer Service is great) and returned to SMF for ideas. I was stunned and saddened to learn of Ron's...
I assume the Retro-Fit works for my 20070910 model. I just received one as a replacement for the 20070106 that "died" after less than 7 months. I did notice the smaller wood chip holder, and I'm hoping lack of smoke won't be an issue. So, will the Retro-Fit work for mine?
My misunderstanding. Sadly, mine is also an older model and does not have the "meat probe" I've seen on newer models. I would still rely on my trusty Maverick ET-73.
I clean the probes by giving them a good rub with antibacterial wipes. Those that have a scrubbing side are best. I put shrink tube on mine right after I got it. It should go over the probe (from the wire) only about an inch. I never put them in water.
I'll be smoking a 10 lb brisket for a family gathering next Tuesday on my MES. Should I smoke fat side up or down? Should I score the fat before the rub?
I love my MES for the following reasons:
Easy and clean to set up and get going.
Easy to control temps.
Easy to QUICKLY adjust smoke.
Easy to clean.
Don't burnt little fingers, or noses from sniffing animals (incl. spouses and friends).
Set up without danger on my wooden deck.
Doesn't...
I bought my from Amazon.com. It was the best price I could fine. I have had to replace the smoker probe once and the food probe once. Maverick sent me replacements free, without me having to return them, and without charging S&H.
Doesn't take up a lot of room.
I can use it on my wooden deck.
Doesn't burn little fingers or sniffing animals (including spouses).
Inexpensive to operate.
Easy to set up prior to smoking.
Easy to use and monitor/adjust temps.
Easy to clean.
Easy to modify....if you choose.
Clean to use...
