I agree with Texas hunter, it looks like hickory to me. We have some and have lost some others and based on the bark that's what is looks like. One clue would be hickory is really, really hard. If you have a lot of trouble cutting it, that might be a clue.
I'm planning about 5 lbs of chicken legs and some ABT's this weekend. I smoked chicken for the neighbors, who just had child number 5 the other weekend and didn't save any for us. What a dumb idea. I'm never somking again without a little side stash for us!

thank's. I'm guessing 6-9 hours based on my previous poultry smokes. I typically brine, then dry the bird good. I'll smoke with no water pan to help with the rubbery skin and once or twice baste with honey to help it crisp up.

Cowgirl, here's the problem and the question. That temp table, like others I've seen is 6.5 hours at 240 for a 12 lb bird. Any guess for a 21 lb bird. The one I have is almost double the size of what's on the chart.

I did a pretty thorough step by step through the brontasaurus style beef ribs. If you search my past posts I'm sure you'll see it. It strikes me as being in late summer of this year. It's my favorite thing on the smoker!

Thanks all, it's good to be able to chuckle about it now, but it was pretty scarry at the time. It looks like we are going to have a busy weekend of cleanup. I have a couple of people who have voulenteered to help Saturday which will be great.
