What kind of wood is this?

I agree with Texas hunter, it looks like hickory to me. We have some and have lost some others and based on the bark that's what is looks like. One clue would be hickory is really, really hard. If you have a lot of trouble cutting it, that might be a clue.

Is anyone else planning your next smoke?

I'm planning about 5 lbs of chicken legs and some ABT's this weekend. I smoked chicken for the neighbors, who just had child number 5 the other weekend and didn't save any for us. What a dumb idea. I'm never somking again without a little side stash for us!

    MES additonal heater mod

Dave, great mod. I was wishing the larger MES had been available at the price I saw them at Sam's back when I bought mine. I have the smaller one, so I haven't seen the same issue.

a little help with a BIG turkey

Richtee I agree I don't see it taking 12 hours. I know it wouldn't take that long in the oven and we're only talking 275 vs 350. Point of comparison, a relative did a turkey that was 15 lbs for 7 hours in the oven for Christmas. It was way overdone, dry and tasteless. I think most food tends...

a little help with a BIG turkey

thank's. I'm guessing 6-9 hours based on my previous poultry smokes. I typically brine, then dry the bird good. I'll smoke with no water pan to help with the rubbery skin and once or twice baste with honey to help it crisp up. I also have debated smoking for about 5 hours than then...

a little help with a BIG turkey

Cowgirl, here's the problem and the question. That temp table, like others I've seen is 6.5 hours at 240 for a 12 lb bird. Any guess for a 21 lb bird. The one I have is almost double the size of what's on the chart.

a little help with a BIG turkey

My wife got us a big turkey for free with points at the grocery store. She figured why not get the biggest one and smoke it. I like her general line of thought here! The question comes how long does it take to do a 21 lb turkey in a mes that will max out at 275? I wanted to have some others...

    near miss

I'm a big fan of my mes. I find the controlls make it pretty easy to repeat good results. The unit being well insulated is nice for those winter smokes as well. I find I can get distracted by other chores esier in the nice weather and I realy enjoy a crisp quiet weekend with the smoker in the...

    Beef rib confusion

Dan, I did a pretty thorough step by step through the brontasaurus style beef ribs. If you search my past posts I'm sure you'll see it. It strikes me as being in late summer of this year. It's my favorite thing on the smoker! Bill

    near miss

mossymo, thanks. My wife didn't find it funny when I put the smoker on the B list of items taht needed to be gathered if I went back to the house. We have a 4 month old daughter and we grabbed som random stuff and headed for my parents. Once we got to their house we chuckled a little about...
