Cold smoking is generally considered 100 degrees tops but I've never tried it before. Going to try it this weekend I think. Got some bacon going on I'll just segregate part of the grill for cheese.
I tried to make beef jerky on a Brinkmann bullet smoker. Turned the been into little charcoal strips.
Dumped the batch and didn't go back to smoking for 10 years.

So my first attempt at bacon went pretty well. As usual I can't leave well enough alone, and decided to change things up a bit.
I've got 2 belly halves curing right now. One is about 4 lbs, one is 3.5 lbs.
Skin removed but not split
4lb slab:
1/4 cup tenderquick
1/4 cup dark...
Around here we are getting more and more places opening up, though most of them don't really smoke due to either local ordinances prohibiting it or complaints from the neighbors which has shut down more than one place.

We used 4 Panasonic cameras, an HGX and HVX 200 shooting onto P2 cards, and a couple of the consumer model handheld units, a boom, two wireless mic's, and a small portable mixer to keep it all together, at least when we had two cam's in the same location...
