/agree with brent about every thing. GOSM may take a little longer than 20mins but that depends on your own mechanical aptitude but it is still every easy no matter what it is. Smoked foods freeze well and I would suggest you get a vac sealer it will come in handy if you get addicted and you will.

I did 2 fattys before I seen my competition well I have to say didn't think outside the box enough thats for sure.

I also can only smoke on the weekends so I think of the week as menu prep and design time. I also discuss these recipes with my smokers to see what he thinks also
Looks good rich, I'll have to get some pointers from you on salmon smoke. I will be going on a salmon fishing trip this year and I want to try smoking whatever I catch.
