    traeger fails.

It's all about the volume of fuel relative to the size of the cook chamber. All things being equal, a small properly combusting fire (i.e. as evidenced by "TBS") will generate a certain amount of heat. A larger fire (more fuel) combusting with the same efficiency in the same smoker will generate...

Pork Shoulder Strips on the 18.5" Weber OTS

It came out SOOOOOO good. Took it to 200F internal temp and it pulled apart perfectly. Basted it in a heated BBQ sauce/red wine/pork rub basting sauce just prior to pulling apart for plating. $8 of meat could easily serve 5-6 people. Served it with a sweet corn-green pea potato mash. Weber...

    traeger fails.

It just seems wrong to have a smoker require an electrical plug to work. That's just me.

A small (< 5lb) pork loin is lean and will come to temp quite quickly. Your pit temps and protein size are about right for a 1.5-2.0hr cook time.

SFB Minion Method - Am I doing something wrong?

Where are you measuring pit temps in your TMLE? What type of thermo are you using? I've found that mine really wants to be a stick burner. Once I get the coal bed nice and hot, I switch to wood (small split and large chunk). I only add handfuls of lump hardwood charcoal when the coal bed starts...

    Questions re competitions

Another option on the pork steaks is to use all the time to sit them in a brine (at least 3 hrs, no more than 6 hours). Try equal parts smoked sea salt and light Muscovado or Turbinado sugar, add cracked Malabar black pepper, a couple bay leaves and a couple dashes of Worchestershire in a 1/2...

    Charcoal Smoker Supplies?

If you DO decide to keep it, you'll want to make sure he sees this link. An owner of the same smoker did a series of modifications to his. Looks like a fun little DIY project. http://home.comcast.net/~day_trippr/smoker_mods.htm If you can return it, I'd do that and pick up a Weber kettle. If...

I also recommend a pair of heat-insulated food-safe gloves. Great for handling the big cooked proteins. They’re a pawsaver for sure. ($15): http://www.homedepot.com/p/Steven-Raichlen-Insulated-Food-Gloves-1-Pair-SR8037/203147393 ThermoWorks' Instant Read digital thermo is on sale right now...

Master Forge Vertical Smoker - Peeling paint?!

I wouldn't repaint. I'd scrape as much of that peeling paint off as I could and spray it liberally with a can of cooking spray. Then, I'd run it without food to as high a temperature as I could get it for a couple hours. That'll protect the metal and eventually turn a nice deep black after a few...

    Brinkmann Trailmaster Limited Edition

Get this one:  http://www.homedepot.com/p/Deflect-o-4-in-Aluminum-90-Degree-Elbow-DE904/100089524 To install, snip a whole bunch of 1" slits in the ribbed end, wedge it through the exhaust stack's mounting hole (you'll have to squeeze it into an oval shape to get it through...), and fold the...

    Brinkmann Trailmaster Limited Edition

That'd be zero. 1. It doesn't get that hot, 2. aluminum isn't going to outgas anything even if it DID get hot, and 3. gases that get in contact with it are on their way out of the pit anyway. You're overthinking this. I use a modified two-ply aluminum cookie sheet as my heat baffle.
