    FWIW I did two beer can chickens in an hour an a half cooking indirectly on a gas grill at 250. 4 burners, and turned off the two in the middle where the birds stood. Cooked to 170 internal. Perfecto.

    1)Do you do the whole process described on the website everytime you fire it up? 2)Do you use water in the pan while you cook, or just use that for cleanout purposes? 3)Does the 60 move around easily on level surfaces?     From what I have found, the wood burnt down to hot coals doesn't last that long, and I consume WAAAY more wood using the burn barrel method.

    I say max about 4 slabs per drum, that's with two cooking grates. I don't think you could get much more on there unless you cut the racks up into thirds or something like.
