I would say the rain theory is incorrect. Look at the way a Lang is designed. It has a cover on it already and an exhaust. I think the stack damper helps to slow the fire a little when closed a little...like 45deg. Fully open would increase the draft. I kind of played with it on Mother's Day...

When in doubt go for a lab. Nice thing is that they can be big or small, depending on who has bred them. Smart, lovable, loyal, watchful, and can be trained to do anything.

I guess I used "latex" to generally. Kind of like calling all soda "Coke." I usually buy the nitrate gloves from Harbor Freight or something like that.
I do need some of the insulated gloves to handle meat. I have bear paws, but they can only do so much. Still have to seperate some fat, etc...
I haven't noticed those large spikes so far, but if I open it up I close it rather quickly. To that point though, I can grill the hell out of some food with the lid off.

What I had success with in a chargriller size firebox is about 1/3 to 1/2 the size of what you're saying, and only about 12" long. Really works good if you get them to the point they start smoking on top of the firebox.
