How much food does a Lang 48 Patio hold? QView

This happens to me mostly when doing ribs. The skirtmeat rarely makes it to be used another day.

3 2 1 with ribs was way overcooked

Well, just open up the foil and don't move the ribs if they seem that soft. Test the foiled ribs with tongs and se how "bendy" they are. If they are indeed really bendy, just open them up and don't mess with removing the foil completely until it's time to serve them. Do leave them for additonal...

    Buying a new smoker

nevermind then. If you want bigger, you need to go horizontal for sure. Drums are a great alternative though too. 22.5" grates can hold a lot of food, they don't require near as much attention as a horizontal, use less fuel, etc.

    1st competition starts tonight!

I got there around 6pm. Found a good spot. Setup everything I had, smoker, tent, chair, stack of wood, etc. Then people started trickling in. I think people were feeling bad when I was there an hour alone, but then when my 28ft camper showed up I think they got a little jealous. That's just how...

Smoked Beef, Chicken and Pork Tostada

Thanks for taking it to the next level. Truly a wonderful job. It's like the Food Network around here when you cook something. I honestly LOVE the variety. Thanks!

    Losing the fat cap

I get sick of separating the bottom part if I leave it on. Especially if you use a crutch. It becmoes so moist, but is hard to get all the fat OUT of the PP when it's done. I trim most of it off these days. EDIT*** Jeez. Who brought this one back to life...been awhile.

Looking for a rub for pork shoulder picnic

I don't think spritzing will do much, but ruin your bark. You may try to inject with something. I did a couple butts with kosher salt and black ground pepper. Really tasty bark on those. Good luck. EDIT**** I hear Jeff's rub is amazing, but I haven't ordered the reciepe.

Luckily I was able to play hooky from work today. I still have long list of stuff to do, like make a few batches of sauce, etc. I had posted a link in the competition forum, Sedalia center. I think there are a couple memebrs fairly close by. Rocky Mount area possibly? Anyhow, I plan on making...

    Green Egg or Komado Grills

Extremely efficient. I wastched for several minutes while somebody was cooking buffalo burgers (smelled great btw). When he opened the lid to move stuff around, he closed it back and it literally 5-10 seconds or less it was back up to temp. I have never seen a thermo read that quickly. Very...

Reverse Flow diagram measurements ... Rekindled

    D. Doesn't need to be be anywhere near that big a gap IMO. A couple inches is okay. Door size...consider whether you are going to try and incorporate slide out grates, or fixed ones. Also how much room between the two shelves, and top shelf to top of smoking chamber distance should also be...

    Wood ?

I have always been told as long as the wood isn't soft, it's fine, taking for granted it is seasoned and dry. NOt sure on the type of wood you got though.

    warming splits

So I don't get carried away with the torch I start charcoal with the torch, then add splits. I also warm them on the firebox before adding them to the fire. I like the torch, but only use it initially.
