Love using the slaughter house brine but I have a quick question....do I rinse the chicken well after the brine or just toss it on the grill directly out of the brine?

Planning on some prime rib saturday. Trouble is, when I try to catch the drippings in a roaster pan it's always dried up when the meat is done. Do you guys just keep pouring water in andifferent monitor it so it doesn't dry up?

Should I treat it like a brisket and just rub it or marinade it in something ? Gonna smoke a chuck and pull (IT 205ish) it for sandwiches or just to eat.
Anyone butterfly a sirloin or some kind of roast to use as a fatty? I've seen steak ums used inside the bacon for a wrap. The misses doesn't like sausage much so that's out,we could use Hamburg and wrap cooked steak in thay with peppers and onions, but I'd like to try and filet some kind of meat...
A local butcher shop shop carries this stuff, a ton of it. They swear by it...
I didnot have time to ask what they use it for. Anyone have any recipes they use it on? It sounds good, maybe in chicken? I'm not really sure?

If I want 250 I have to set it at 275 in the controller. I use a maverick literally right beside the iq probe and the temp is 25 degrees off.
When set at 275, the iq runs at 235 to 245. Is this normal?
I realise the probes will read different but why...
