15 lbs 4th of july brisket
first off, you posted this in the pork section of the forum.. so you might not find the information you want here. also brisket plateaus out around 160-ish or so where it chills out and stalls a bit.. which is when all the connective tissues break down. others might help you out better, but...- squalllheart
