It came out SOOOOOO good. Took it to 200F internal temp and it pulled apart perfectly. Basted it in a heated BBQ sauce/red wine/pork rub basting sauce just prior to pulling apart for plating. $8 of meat could easily serve 5-6 people. Served it with a sweet corn-green pea potato mash.

Another option on the pork steaks is to use all the time to sit them in a brine (at least 3 hrs, no more than 6 hours). Try equal parts smoked sea salt and light Muscovado or Turbinado sugar, add cracked Malabar black pepper, a couple bay leaves and a couple dashes of Worchestershire in a 1/2...

That'd be zero. 1. It doesn't get that hot, 2. aluminum isn't going to outgas anything even if it DID get hot, and 3. gases that get in contact with it are on their way out of the pit anyway.
You're overthinking this. I use a modified two-ply aluminum cookie sheet as my heat baffle.
